Palm oil is one of vegetable oils and can partially replace other oils including soybean oil, peanut oil, sunflower seed oil, coconut oil, lard oil and beef tallow so on. In addition, palm oil's price also fluctuates greatly.

Palmae originated from West Africa at the earliest. Industrial palm oil is red and extracted from palm tree bark, whereas palm kernel oil is white and extracted from the internal kernel. The production process of palm oil and palm kernel oil is very complex and mainly includes the following steps: degerming, extraction, bleaching and deodorization.

As one kind of oil with higher degree of saturation, palm oil was once speculated to possibly increase the cholesterol level in human serum. However, further experiments by many experts provide that intake of palm oil will have a trend of reducing cholesterol, rather than increase the cholesterol level in serum. A number of study data show that different saturated fatty acids cause different influences on blood lipid. In palm oil, there are rich neutral fatty acids and negligible (1%) substances of promoting cholesterol increase. Rich natural vitamin E and tocotrienol (600-1000mg/kg), carotenoid (500-700mg/kg) and linoleic acid (10%) in palm oil are beneficial to the health of human body. Some researchers have ever conducted investigations for different races (Europe, America, Asia), and the results suggest that palm oil is one kind of edible vegetable oil fully complying with human health needs.

Palm oil is obtained by pressing palm fruits of oil palm trees. Palm pulp and kernel respectively yields  palm oil and palm kernel oil, and palm oil called in the traditional concept only includes the former. Palm oil is refined and fractionated into different melting points of products which are widely used in catering industry, food industry and oleochemical industry. Southeast Asia and Africa are main production areas of palm oil, accounting for 88% of total yield of palm oil in the world. Indonesia, Malaysia and Nigeria are the first-three largest manufacturing countries in the world. At present, China has become the first largest palm oil importing country internationally, and annual consumption amount of palm oil reaches about 6 million tons, accounting for 20% of total available market.
